St David's Day - Welsh Lamb Cawl

St David's Day Welsh Lamb Cawl

Serves: 6 people        Prep Time: 20 minutes        Cooking Time: 3 hours  

Celebrate St David's Day with our hearty Welsh lamb cawl recipe!

Cawl is a traditional Welsh stew packed with meat and vegetables.

It is typically served with rustic bread and Welsh cheese.

 Ingredients

 1kg diced lamb or shoulder of Welsh Lamb

2 litres of vegetable stock

1 onion (roughly chopped)

3 large potatoes (peeled & chopped)

3 carrots (peeled & chopped)

1 swede or parsnip (peeled & chopped)

2 leeks (sliced)

A few springs of parsley (chopped)

A few springs of thyme (chopped)

Salt & Pepper to taste

 

Method

1. Place the lamb into a large pot and pour in the vegetable stock, so that the meat is fully submerged.

 

2. Bring the pot to a boil, then lower to a simmer. Add in the onion, potatoes, carrots and swede/parsnip. Simmer uncovered for 2-3 hours, uncovered, on a low heat. 

 

3. Occasionally check the pot & skim the excess fat off the top of the stew. 

 

4. 20 minutes before the end, add in the leeks, thyme and parsley. 

 

5. When the cawl is ready, take out the lamb and remove all the meat from the bone. Return the meat to the pot and season with salt & pepper to taste. 

 

6. Serve in a bowl with bread and Welsh cheese. Enjoy!
